Quail For Two
Keep in mind that quail are small; I recommend that you cook two for each of you. How your lady removes the tender, juicy meat from the quail bones is a good indication as to how the evening is going. Ingredients:
Marinade:
1. Wash, then gently dry the quail, using soft, luxurious towels that will caresses the quail's every curve. Pay special attention to the section of the body where the thigh meets the hip. Put the towels aside and do not use them again until they are laundered. Cross contamination is not a joke to Smoove. Season each quail with salt and pepper. 2. In a bowl, whisk together the ingredients for the marinade. Marinate the quail for about 6 hours. This is when it is at its most juicy and delectable. You can let it marinate for a few more hours if that is what your heart or schedule requires. 3. Preheat the oven to 475 degrees. 4. Drain the quail, reserving the marinade in a bowl made in the finest reaches of Asia. Now, with the gentle hands of a lover, fold the wingtips under the quail and tie the legs together. Roast for 10 minutes and then reduce the oven temperature to 350 degrees. Roast, basting frequently with the marinade for about 10 minutes. Remove the quail from the oven and cover loosely with aluminum foil for 5 to 10 minutes before serving. Remove string and place on a clean, elaborately decorated serving plate. Garnish the serving plate in a way that will arouse her eyesight while the aroma arouses her sense of smell. 5. This should be served with a side dish of some sort. I recommend greens, possibly sautéed.
